Ingredients

3 eggs


1 cup oil

240ml

2 cups sugar

450g

3 teaspoons vanilla

15ml

3 cups flour

300g

1 ripe cantaloupe (2 cups puree)


1 teaspoon baking soda

5g

¾ teaspoon baking powder

3.75g

2 teaspoons cinnamon

10g

½ teaspoon ginger

2.5g

1 cup walnuts, chopped

125g


Directions:


Preheat oven to 325°F (170C – Gas mark 3)


Beat eggs. Add oil, sugar and vanilla.


Cut chunks of cantaloupe and put in blender to puree.


Add 2 cups puree to egg mixture; add remaining ingredients and


mix well.


Pour into greased and floured 9x5 inch pan.

Bake at 325°F (170C – Gas mark 3) for 1 hour.
