Y is for yam, often incorrectly called a sweet potato. These are, in fact, two very different vegetables. Sweet potatoes are smaller and grow in quite different conditions to yams. Yams are much sweeter with a higher moisture content, are the tuber of a tropical vine, and can grow to over 7 feet in length. They are at home growing in tropical climates and are said to have originated in Africa. A great little vegetable dish you can make uses yams and spinach. This side dish is rich in vitamins and minerals.
Steps of cooking yam.
- Peel and cut your yam into small cubes and wash the cubes.
- Cover them with water in a pan and cook until the cubes are soft.
- Cook the spinach in a tablespoon of the yam juice.
- Drain the yam cubes and add the cooked spinach to the pan.
- Mix with a wooden spoon while adding a little red palm oil, crushed chili and salt to taste.
- A simple and tasty side dish.
